The Craftsmanship
An art handed down over time
Making fusilli by hand takes years of experience. The technique involves precisely twisting the bucatino around a steel spindle. Too strong a movement could block the central hole, which is essential for the digestibility of the pasta; too slow a movement, however, would not guarantee the typical twisted shape. It is an art that requires passion, dedication and knowledge handed down over the centuries.
