For over 400 years, the artisanal method for creating fusilli has never changed, handed down from generation to generation. Each fusillo is the result of a precise and fast gesture, masterfully made by our expert fusilla makers.

The Craftsmanship

An art handed down over time

Making fusilli by hand takes years of experience. The technique involves precisely twisting the bucatino around a steel spindle. Too strong a movement could block the central hole, which is essential for the digestibility of the pasta; too slow a movement, however, would not guarantee the typical twisted shape. It is an art that requires passion, dedication and knowledge handed down over the centuries.
